Szechuan peppercorns, also called "Chinese Coriander", are a pinkish red outer husk of the Prickly Ash. They go well with star anise and ginger in Chinese 5 spice. Pairs well with chiles, try roasting under low heat. Think stir fry, dumplings, noodle dishes, kung pao chicken.
