Authentic NY Deli-Style Corned Beef Brine Spice Blend
If you have ever enjoyed authentic NYC Deli-Style corned beef you know there is no substitute. Lucky for you we have put together a spice mix which takes care of all that, leaving you to simply soak (brine) and then bake and enjoy the corned beef.
We recommend using a flat-cut brisket, and brine it for 5-7 days. There are so many ways to brine, so find a technique online and use our blend, and you'll be pleased with the results. We recommend that you look online for a technique insofar as brining handling and cooking time, and follow it.
Whatever technique you choose preparing an authentic NYC Deli-Style corned beef is a two step process: 1) brining, and 2) cooking.
In a large pot add all of the mix ingredients and bring to a boil. After all of thesaltand sugar has dissolved shut off the heat.
Let the mixture cool completely.
Once the brine is cool place the brisket inside a 2 gallon plastic bag and place the bag inside of a large container that will catch any accidental drips. This container has to be able to fit inside of your refrigerator.
Carefully pour all of the brine inside of the plastic bag and seal it. Lay the plastic bag flat inside of the container and place in your refrigerator for 5-7 days.
Each day carefully turn the bag upside down to stir the brine and make sure all of thebeefis submerged.
Once ready to cook discard the brine and the spices and rinse the cornedbeefthoroughly.
After brining for 5-7 days in the refrigerator, and before cooking, rinse the cut with cool water to remove any excess salt.
Rinse the cornedbeefreally well to remove any excesssalt.
Place a trivet (preferably one with handles) in a 6 or 8 quartInstant Pot. Place cornedbeefinside with 4 cups of water and cover.
Cook on high pressure for 85 minutes. Release pressure naturally for 20 minutes and then release any remaining pressure.
Our mix is packed in a small ziplock bag and contains the following ingredients, sufficient to brine one 3-4 lb brisket: juniper berries, cinnamon, whole cloves, peppercorn, bay leaf, mustard seed, beet powder (for color), kosher salt, coconut sugar.
